White Mushroom & Truffle Oil Pizza

Get ready to become a white sauce pizza fan.

This pizza is absolutely bursting with flavour at every turn. From the caramelized onions, to the buttery garlic sauce and the palate pleasing drizzle of truffle oil. Toppings
  • Olive Oil (to sauté onions/mushrooms & brush dough crust)
  • 1/3 Cup Red Onion, Sliced
  • 3/4 Cup Mushrooms of Choice, Sliced
  • 1/2 pkg Mozzarella, Sliced
  • Grated Asiago Cheese, to Taste
  • 1-2 Sprigs of Thyme
  • Drizzle of Truffle Oil
  • Salt/Pepper to Taste
  • Handful of Arugula
Sauce
  • 1/8 Cup Butter
  • 2 Garlic Cloves, Thinly Diced
  • 1-2 Tbsp All-Purpose Flour
  • 1-1.5 Cups Milk
  • Grated Asiago Cheese, to Taste
  • Salt/Pepper to Taste
  • 1 x Green Onion (or Chives), Thinly Sliced
Dough
  • 1 packet of Fleischmann's Pizza Yeast
  • 1-3/4 to 2-1/4 Cups All-Purpose Flour
  • 2/3 Cup Very Warm Water (50-55C)
  • 3 Tbsp Oil
  • 1-1/2 tsp Sugar
  • 3/4 tsp Salt
  1. Preheat oven to 425F and place a baking sheet upside down in oven (or pizza stone, if using).
  2. Heat oil in skillet. Add sliced Onions and allow to cook until almost caramelized (about 10-15 minutes). Add Mushrooms and continue to cook until browned and reduced in size.
  3. Transfer cooked onions and mushrooms to a plate, set aside.
  4. Prepare pizza sauce by melting Butter in the same skillet. Add Garlic and cook until softened.
  5. To butter-garlic skillet mixture, add 1 Tbsp Flour and stir to coat. Slowly add Milk
  6. Continue to heat and stir milk until reduced, add more flour or milk as needed to achieve desired sauce thickness.
  7. Once desired sauce thickness is achieved, remove from heat. Mix in Salt/Pepper, Green Onions and Asiago Cheese. Set aside.
  8. Prepare pizza dough mixture according to Yeast packet, then place on parchment paper.
  9. Top pizza dough with sauce, then add onions, mushrooms, Thyme, Mozzarella, asiago cheese, salt/pepper, and Truffle Oil.
  10. Brush oil along pizza crust, place pizza with parchment paper on top of inverted baking sheet. 
  11. Bake for 12-22 minutes, until crust is browned. Top pizza with Arugula before serving!
  1. Pair this recipe with a full-bodied, oaky character wine such as Chardonnay!
  2. Choose a variety of mushrooms for more umami goodness!
  3. Feel free to substitute asiago cheese for parmesan, or another hard cheese of choice!
