Shake up that boring old meal prep with some Shake'n Bake Chicken (with a healthy twist, of course!). Paired with a game-changer Garlic Aoili!

Shake'n Bake Chicken with Garlic Aoili
Makes: 4 Servings  /  Prep Time: 35-40 Minutes


4 Boneless, Skinless Chicken Breasts
1 cup Quick Oats
2 Tbsp Ground Flaxseeds
1.5 tsp Garlic Powder 
1 tsp Paprika
1/2 tsp Oregano, dried
1/8 tsp Salt
1/4 tsp Ground Black Pepper
1/4 cup Parmesan, plus additional for garnish
2 Tbsp Olive Oil 

Dipping Sauce:
1/3 cup Plain Greek Yogurt
1/3 cup Mayonnaise
1 Lemon (or Lime) wedge
1 pinch Paprika
1 Garlic Clove, grated


1. Preheat oven to 375C.
In a blender or food processor, combine: oats, flaxseeds, spices, and Parmesan cheese. Blend until oats are finely ground and set aside.
3. Drizzle olive oil over chicken breasts to help the shake'n bake mixture stick to the chicken.
4. Transfer blended shake'n bake mixture to a container that will be used for dipping the chicken into.
5. Coat chicken evenly on both sides and transfer to a parchment paper-lined baking sheet. Bake for 30 minutes and serve with Garlic Aoili Dipping Sauce! 

For dipping sauce: Combine all ingredients and juice squeezed from lemon wedge into a small dish, mix well!
